The best part of eating clean are the cheat days, and the best part of having children is when you can turn them into your own personal indentured servants. It’s all about the payoff, and I look forward to the day when I have kids to vacuum and clean up dead squirrels from the front porch, because I am TOO FANCY for such things.
And the best part of being a food blogger is the swag for just cooking up stuff and writing about slave labor. My friend Isabel over at Family Foodie invited me to a Desserts in Jars party she was hosting at Datz Dough, a new pastry-centric restaurant spinoff from the highly acclaimed Datz Delicatessen in Tampa, FL. The event was to celebrate Datz’s induction of various desserts in jars as inspired by Shaina Olmanson‘s newest cookbook, Desserts in Jars. Their newest menu items include Shaina’s peanut butter cup cupcake, caramel crème cheesecake, pull apart cinnamon bread, cherry almond crumble, and lemon meringue pie with thyme shortbread crust.

For my own personal contribution to desserts in jars, I made a paleo-friendly dessert of chocolate and “peanut butter” pudding (which is actually almond butter since, you know, legumes are evil) with no dairy, no refined sugar, no junky stuff.
The bad thing about cheat days are that I usually eat sweets to the point of delicious nausea, though I never actually get sick. I haven’t thrown up in 20 years, but the last time I did throw up it was on a talking Pee-wee Herman doll with a pull string on its back. Anyway, after I vommed on Pee-wee he only spoke in a low demonic voice, and I’m 105% certain I passed the devil into him. So what I’m saying is…this house is clean.
My god, this is not appropriate food blog fodder. Who even let me on the computer? Forget I said anything and just enter this damn giveaway.

PALEO CHOCOLATE PEANUT BUTTER PUDDING
[print_this]Recipe: Paleo Chocolate “Peanut Butter” Pudding
Preparation time: 10 minute(s)
Cooking time: 5 minute(s)
Number of servings (yield): 3 servings in 8oz jars
Ingredients
For Chocolate Pudding:
- 2 extra ripe avocados
- 7 oz. EnjoyLife chocolate chips
- 4 tbsp grassfed butter
- 4 tbsp honey (+ more if desired)
For “Peanut Butter” Layer:
- 3/4 cup creamy almond butter (room temp or warm)
- 1/4 cup softened coconut oil
- 3 tbsp honey
Instructions
For Chocolate Pudding:
- In a double boiler over medium-low heat, combine butter and chocolate chips and stir constantly until melted and smooth.
- Combine all ingredients for the chocolate pudding, including melted chocolate, in a food processor and run until combined and smooth.
For “Peanut Butter” Layer:
- With an electric mixer, whip almond butter, honey and coconut oil for 2-3 minutes; the mixture will be runny. Refrigerate for 30 minutes before layering to allow it to set slightly.
- Alternate layers of “peanut butter” layer and chocolate pudding, starting with refrigerated almond butter mixture and ending with pudding. Refrigerate for at least 1 hour before serving.
